The Process
How Our Beef Ordering Process Works
SATARA FARMS
Premium Pasture-Raised, Grain-Finished Angus Beef | Gregors Creek, Queensland
From Our Farm to Your Table
At Satara Farms, we believe great beef starts long before it reaches your plate. Our Angus cattle are raised on the beautiful pastures of Gregors Creek, Queensland, before being carefully grain-finished to develop tenderness, marbling and rich flavour.
We take pride in providing premium Australian Angus beef directly to families, with a focus on quality, animal welfare and making the most of every beast.
To ensure freshness and minimise waste, we operate on a whole-beast ordering system, offering customers the opportunity to purchase either a quarter or half beast.
1. Choose Your Beef Box
We offer two options:
1/4 Beast Mixed Beef Box
Perfect for families wanting to stock their freezer with a balanced selection of premium steaks, roasts, mince, sausages, burger patties, ribs, slow-cooking cuts and beef tallow.
1/2 Beast Mixed Beef Box
Ideal for larger families or households wanting to purchase beef in bulk, offering a generous quantity of cuts from across the animal.
Both options are priced at $22 per kilogram of dressed weight.
2. Secure Your Order with a $300 Deposit
A $300 deposit is required to reserve your quarter or half beast.
This is a deposit only, not the full purchase price. It is deducted from your final invoice.
Once the actual dressed weight has been confirmed, we calculate the total cost and provide your final invoice.
The remaining balance must be paid in full before delivery.
3. Orders Are Collected Until a Whole Beast Is Sold
Unlike traditional retailers, we don't process cattle and then wait for customers to purchase the meat.
We take orders for quarter and half beast packages until the equivalent of an entire animal has been reserved.
For example, one beast may be allocated to:
Four quarter-beast customers
Two half-beast customers
One half-beast customer and two quarter-beast customers
While orders are being collected, our cattle remain on our property at Gregors Creek, where they continue to receive appropriate feeding, care and management.
Once the entire beast has been reserved, we arrange processing and confirm the anticipated delivery schedule with customers.
4. Local Processing and Beef Ageing
Once all orders are confirmed, the selected steer is transported to a local licensed abattoir for professional processing.
Our planned processing schedule begins on a Sunday, subject to the abattoir's operating arrangements and availability.
Following slaughter and dressing, the carcass is placed into controlled refrigerated storage and hung for approximately seven days.
This ageing period allows natural enzymes to gradually break down muscle proteins, helping improve tenderness and eating quality.
The carcass is then professionally butchered by a local butcher into the mixed selection of cuts allocated to each customer.
Our beef is processed under appropriate food safety and refrigeration controls from the abattoir through to final packaging.
5. Professionally Butchered, Vacuum-Sealed and Labelled
Once the ageing period is complete, our local butcher prepares the beef into convenient portions.
Your order includes a variety of cuts from across the animal, such as:
Premium Angus steaks
Roasting joints
Brisket and chuck
Beef ribs
Diced beef and slow-cooking cuts
Beef mince
Beef sausages
Beef burger patties
Beef tallow
All beef is professionally prepared, vacuum-sealed and clearly labelled.
Vacuum sealing removes much of the air surrounding the meat, helping protect it from oxidation, reduce freezer burn and maintain eating quality during appropriate refrigerated or frozen storage.
Each package is labelled so you can easily identify the cut, organise your freezer and plan family meals.
6. Fresh Beef Delivered to Your Door
Following butchering and packaging, your beef is delivered fresh and chilled, never frozen.
Our anticipated delivery days are Thursday and Friday following completion of the ageing and processing schedule, subject to butcher availability and delivery arrangements.
We arrange delivery once your beef is ready and your final payment has been received.
Your order arrives:
Fresh and chilled
Professionally butchered
Individually vacuum-sealed
Clearly labelled
Conveniently portioned
Ready to refrigerate or freeze
All deliveries must be maintained under appropriate refrigerated transport conditions to protect food safety and quality.
7. How to Store Your Fresh Angus Beef
Our beef is delivered fresh, allowing you to enjoy it straight away or freeze portions for future meals.
Refrigerating Your Beef
Place your beef into the refrigerator immediately after delivery and maintain a temperature of 5°C or below, ideally between 0°C and 4°C.
Vacuum sealing can extend the shelf life of fresh beef when it is processed, sealed and stored under validated food safety conditions.
Always follow the use-by date printed on each package, as the safe refrigerated storage period depends on the type of cut, packaging process and temperature control.
As a general guide for home storage:
Fresh steaks and roasts: Use within 3–5 days unless the unopened package has a longer validated use-by date.
Fresh mince, sausages and burger patties: Generally cook or freeze within 1–2 days unless the package specifies a longer validated use-by date.
Unopened vacuum-sealed beef: May have an extended refrigerated shelf life where validated by the processor. Follow the labelled use-by date rather than assuming all products can be refrigerated for one or two weeks.
Once a vacuum-sealed package has been opened, the meat should be treated as fresh unpackaged beef and used promptly.
Freezing Your Beef
For longer-term storage, place your vacuum-sealed beef directly into the freezer at -18°C or colder.
Recommended freezer storage periods for best eating quality are:
Beef productRecommended freezer storageSteaks6–12 monthsRoasts6–12 monthsBrisket and larger slow-cooking cuts6–12 monthsDiced beef3–4 monthsBeef mince3–4 monthsBeef sausages1–2 monthsBeef burger patties3–4 months
These periods are general quality recommendations rather than absolute safety expiry dates. Correct vacuum packaging can help preserve quality, but the recommended storage period still depends on the product, packaging and storage conditions.
For the best flavour and quality, we recommend rotating your freezer stock and enjoying your steaks and roasting cuts within approximately 10 months.
Thawing Your Beef
For the best results, thaw frozen beef in the refrigerator.
Allow sufficient time for larger cuts to thaw completely, and always ensure the beef stays refrigerated during thawing.
Never thaw raw beef on the kitchen bench at room temperature.
8. A Whole-Beast Approach
At Satara Farms, we believe in respecting the animal and making use of as much as possible.
By selling quarter and half beasts rather than individual premium cuts, we can provide customers with a balanced selection of beef while reducing unnecessary waste.
From tender steaks and hearty roasts to mince, sausages, ribs and traditional beef tallow, our mixed boxes celebrate the versatility of the whole animal.
Every beast is slightly different, so individual cuts, quantities and packaged weights will naturally vary.

When you purchase from Satara Farms, you're supporting locally raised Australian Angus beef and a farm-direct approach built around quality and care.
Our commitment is simple:
